Comment of the Week: Drops of water
Inspired to largess by David Lebovitz's new "Ready for Dessert," I Flour Girl'ed this week and asked for the favorite Little Things you've learned by reading pro bakers' classic recipes.
So, my favorite Little Comment was posted by wakeford:
Baking! My husband heard the author of "The Art of Baking" on NPR and knew I'd love the book. I have. But her best little thing has been, that when making cookies, sprinkle a few drops of water into the flour and mix to make a bit more glueten [sic]. My cookies are now brilliant!
It was a new one on me, and I do so appreciate all knowledge that serves the purpose of baking better cookies. So wakeford gets the Lebovitz book, providing he or she sends mailing info to food@washpost.com.
