CSA Scout: At Last, Bring on the Spears

Our first-to-report-for-duty CSA Scout, Meg McCarthy of Columbia Heights, is "overjoyed" that her parsnip days are over. Not that she didn't find something delectable to do with the root vegetables from her Star Hollow Farm share; she followed this recipe for roasted parsnip "fries", throwing in some carrots and loving the result. ("Anything crisply roasted and covered in Parmesan is bound to be a thumbs-up for me," she says.)

But the presence of asparagus, green garlic and spinach is what has her finally tasting spring. She's getting a little fancy with the green garlic, not only "using them instead of green onions in basically everything," but also in this recipe for pork lettuce wraps with grapefruit. Mostly, though, she's been cooking things simply and plans to keep that up: roasting the asparagus with olive oil, salt and pepper; sauteeing the spinach with garlic and a little lemon; roasting or grilling the potatoes with rosemary. "I'm thinking a mushroom risotto might be in order for the criminis," she says.


Since Meg loved the Warm Ginger, Cabbage and Apple Slaw recipe I suggested last week ("Definitely a keeper!"), I'll mention another one, this time a way to use the green garlic, 'shrooms and asparagus. It's from Barbara Kingsolver, author of the great "Animal, Vegetable, Miracle" account of living off the land for a year. Her Asparagus and Morel Bread Pudding calls for morels (wouldn't they be nice to get in a CSA box?), but you could definitely throw the criminis or other mushrooms in here and it would still be fantastic. (Or, of course, you could forage for morels yourself.) Whatever you do, make it. This is luscious stuff.

Meg's CSA haul this week, for a grand total of $16.90:

1 bunch asparagus
1 pound spinach
1 bunch green garlic
1 yellow onion
1 pound red French fingerling potatoes
Crimini mushrooms
2 Fuji apples

I loved this Barbara Kingsolver book (and all of her other books, for that matter! Thanks for recommending this recipe- I will definitely try it out.
