Makes 8 to 12 tacos (4 to 6 servings
Adapted from "Tacos," by Scott Wilson (Sasquatch, 2010).
1/2 medium white onion
1 large clove garlic
1 large tomato
2 or 3 limes, for serving
8 to 12 corn tortillas (6-inch)
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1 tablespoon olive oil
1 pound ground turkey
2 tablespoons sweet paprika (may substitute 1 tablespoon smoked Spanish paprika)
1/4 teaspoon dried thyme
Homemade or store-bought salsa, for serving (see related recipe)
Crumbled Cotija cheese, for serving (Giant stores and some Whole Foods Markets carry this hard, crumbly white cheese)
Leaves from 1/2 bunch cilantro, for serving
