Shop for this week's Dinner in Minutes




Chef Sara Moulton has been making weeknight dinners look easy for years, in cookbooks and on TV. This recipe's from her new collection, "Everyday Family Dinners" (Simon and Schuster). It includes strategies on how to cook "smarter, faster and cleaner," as she writes in her introduction. One of them is dispensing with mise en place, which just means that she has written the recipes the way we do our Dinner in Minutes: in real time, such as chopping the next ingredients while something's cooking in the skillet. The title pages of each chapter are well delineated for quick skimming, and Moulton has created lots of chapters that cover a range of needs, such as cooking for two, appetizers for dinner and the one from which this recipe comes: five-ingredient mains.

People who really like the combo of flavors presented in an order of buffalo chicken wings -- blue cheese, celery, hot sauce, chicken -- get all of that in this 25-minute, two-pan dish. (FYI: Nitpickers will note there are more than five ingredients, but not that many more.)

Buffalo Rice
4 servings

1 cup long-grain white rice

3 tablespoons unsalted butter

8 ounces (uncooked) boneless, skinless chicken breast half (NOTE: Hungry/especially carnivorous folks might want to use 1 pound)

2 tablespoons hot sauce, such as Tabasco

4 ounces blue cheese

1 cup celery leaves, for garnish (optional)
