Shop for this week's Dinner in Minutes

This 20-minute recipe's good enough for everyone to enjoy, but designed with diabetics in mind. It's adapted from Amy Riolo’s "The Mediterranean Diabetes Cookbook" (American Diabetes Association, 2010). Don't skip the anchovies: They're essential for this dish.

Sicilan-Style Tuna Steaks
4 servings

1 or 2 large oranges

Leaves from 2 stems of mint

1 medium sweet onion

1 tablespoon capers

4 to 8 oil-packed anchovy fillets

2 tablespoons extra-virgin olive oil

Four 4-ounce yellowfin tuna steaks (3/4 to 1 inch thick; or buy a 1-pound steak and cut it into 4 equal pieces)

1/4 teaspoon sea salt, preferably Maldon
