Lunch break

I'm just leaving New York, and having my traditional trip-ending bagel. As such, a tutorial on making decent bagels in the comfort of your own home seems appropriate.

like many things in life, making bagels is something everyone should try once.
i was snowed in, in bleak and frigid darkness on the alaska range in a cabin in fairbanks, in february...and figured...this is going to be a very long day...why not make bagels?
i made every kind i could think of, and they came out surprisingly well. those comforting bagels got me through a very difficult day.
i think i ate everyone of them.
a good project when there is snow and ice imploding on your roof and icicles as long as a walking stick.

Rather than make them, just go to Kossar's Bialys on 367 Grand. The bagels are delish.
